Homemade Chicken Sausage

Hey! Was rummaging through my freezer doing some last minute meal planning this morning and realized that I'm all out of chicken sausage, so I grabbed some ground chicken and made my own and you can do it too. Here's how:

1 lb ground chicken

2 tsp fresh sage leaves, chopped (or 1 tsp dried)

2 tsp maple syrup

3/4 tsp Real Salt

1/4 tsp cracked black pepper

1/4 tsp nutmeg

1/8 tsp red pepper flakes

1 tsp fresh marjoram leaves (or 1/2 tsp dried)


  1. Well, these are the simplest instructions evah; combine all these ingredients and let the mixture sit. The sausage makes itself and the longer you can let it sit, the more the meat will absorb those good flavors.

I'm showing a picture of the raw product here because its about to become a sweet potato hash and will be mixed with other ingredients during the cooking process, but certainly, these would be great formed into patties and fried up to be used in breakfast sandwiches. If you have a device that stuffs sausages, you could turn it into links and boil them or maybe roast them over the fire. I find that I use most of my sausage in bulk format, so I like leaving it loose.

I feel like everything is political right now in the world and I just can't be part of the anger, angst and cruelty that I see propagated in those places by really well-meaning people. I just want to focus on the things I love and I feel like my own blog is a more gentle platform for me to do that. So here I am. Only here for the time being. I know I won't get as many eyeballs on my posts, but that's ok - there's freedom in that too.
